McCain Straight Cut Classic Chips & Vetkoek with Cheese Sauce & Atchar
Ingredients
1kg McCain Straight Cut Classic Chips
12L Vegetable Oil, for deep frying
4 Vetkoek, cut in half
For the Cheese Sauce:
60g Butter
2 tbsp Flour
1L Milk
200g Mature Cheddar Cheese, grated
2 tsp Hot English Mustard
1 tsp Garlic Powder
1 tsp Onion Powder
Garnishes:
Crispy Onions
Hot Mango Atchar
Pea Shoots

- Fries Preparation: Heat oil in a deep fryer or large pot to the appropriate temperature. Fry the McCain Straight Cut Classic Chips according to the package instructions until golden in colour. Season with salt and set aside.
- Cheese Sauce: In a pot over low heat, melt the butter then stir in the flour with a wooden spoon. Cook the mixture for about 5 minutes on low heat. Gradually whisk in the milk until fully incorporated. Add the grated cheese, hot English mustard, garlic powder, and onion powder. Season with salt to taste. Continue stirring with a whisk over low heat until the cheese has melted and the sauce thickens to the consistency of mustard or mayonnaise. Adjust the thickness with a splash of milk if necessary. Transfer the cheese sauce to a squeeze bottle and set aside.
- Assembly: To serve, stuff the McCain Straight Cut Classic Chips into the halved vetkoek. Generously drizzle with cheese sauce, add a sprinkle of crispy onions, and top with a spoonful of mango atchar. Garnish with pea shoots before serving.
