Cauliflower Breakfast Wrap


1 Cup McCain Frozen Cauliflower Florets, Cooked According to Package Instructions and Chopped into Small Pieces

2 Large Eggs

2 Whole Wheat or Spinach Tortillas

1/4 Cup Shredded Cheddar Cheese

1/4 Cup Diced Tomatoes

1/4 Cup Diced Bell Peppers (Any Colour You Prefer)

2 Tablespoons Chopped Fresh Coriander or Parsley

Salt and Pepper to Taste

Hot Sauce or Salsa (Optional, For Added Flavour)

  1. Cook the McCain frozen cauliflower florets according to the package Method. Once cooked, chop the cauliflower into small pieces and set aside.
  2. In a small bowl, whisk the eggs until well beaten. Season with a pinch of salt and pepper.
  3. In a non-stick pan over medium heat, pour the beaten eggs and cook, stirring gently, until they are scrambled and fully cooked. Remove from the heat and set aside.
  4. Warm the tortillas either in a microwave or on a dry pan over medium heat for a few seconds on each side until pliable.
  5. To assemble the wrap, divide the scrambled eggs evenly between the two tortillas, placing them in the centre.
  6. Sprinkle the chopped cauliflower, diced tomatoes, diced bell peppers, shredded cheddar cheese, and chopped coriander (or parsley) over the eggs.
  7. Optionally, drizzle a small amount of hot sauce or salsa for added flavour.
  8. Fold in the sides of the tortillas and roll them up tightly to form the wrap.
