Cauliflower Bunny Chow
Ingredients
400g McCain Frozen Cauliflower
2 Tablespoons Vegetable Oil
1 Onion Finely Chopped
2 Cloves Garlic, Minced
1 Tablespoon Curry Powder
1 Teaspoon Ground Cumin
1 Teaspoon Ground Coriander
1 Teaspoon Paprika
1 Can (400g) Chopped Tomatoes
1 Cup Vegetable Broth
Salt And Pepper to Taste
4 Mini Bread Loaves (Or Any Bread of Your Choice)

- In a large pan, heat the vegetable oil over medium heat. Add the chopped onions and garlic, fry until softened and lightly golden.
- Add the curry powder, cumin, coriander, and paprika to the Pan. Stir well to coat the onions and garlic with the spices.
- Add the Mc Cain frozen cauliflower to the Pan and stir to combine with the spice mixture.
- Pour in the chopped tomatoes and vegetable broth. Season with salt and pepper to taste. Cover and let it simmer for about 15 - 20 minutes, or until the cauliflower is tender.
- While the cauliflower mixture simmers, hollow out the mini bread loaves to create a bowl-like shape.
- Once the cauliflower is cooked, spoon the mixture into the hollowed-out bread loaves, serving the Bunny Chow in a unique and delicious way.
