Cauliflower Bunny Chow

Ingredients

400g McCain Frozen Cauliflower

2 Tablespoons Vegetable Oil

1 Onion Finely Chopped

2 Cloves Garlic, Minced

1 Tablespoon Curry Powder

1 Teaspoon Ground Cumin

1 Teaspoon Ground Coriander

1 Teaspoon Paprika

1 Can (400g) Chopped Tomatoes

1 Cup Vegetable Broth

Salt And Pepper to Taste

4 Mini Bread Loaves (Or Any Bread of Your Choice)

  1. In a large pan, heat the vegetable oil over medium heat. Add the chopped onions and garlic, fry until softened and lightly golden.
  2. Add the curry powder, cumin, coriander, and paprika to the Pan. Stir well to coat the onions and garlic with the spices.
  3. Add the Mc Cain frozen cauliflower to the Pan and stir to combine with the spice mixture.
  4. Pour in the chopped tomatoes and vegetable broth. Season with salt and pepper to taste. Cover and let it simmer for about 15 - 20 minutes, or until the cauliflower is tender.
  5. While the cauliflower mixture simmers, hollow out the mini bread loaves to create a bowl-like shape.
  6. Once the cauliflower is cooked, spoon the mixture into the hollowed-out bread loaves, serving the Bunny Chow in a unique and delicious way.
