Pea and Avo Salad
Ingredients
1 Cup McCain Frozen Peas
2 Ripe Avocados, Diced
1/2 Cup Cherry Tomatoes, Halved
1/4 Cup Diced Red Onion
2 Tablespoons Fresh Lemon Juice
2 Tablespoons Olive Oil
1 Tablespoon Chopped Fresh Mint
Salt And Pepper to Taste
Crumbled Feta Cheese, For Garnish (Optional)

- In a large mixing bowl, combine the diced avocados, cherry tomatoes, and diced red onion.
- Add the McCain frozen peas to the bowl.
- In a small bowl, whisk together the fresh lemon juice, olive oil, chopped fresh mint, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
