Sweet Corn and Chicken Quesadillas
Ingredients
1 Cup McCain Frozen Sweet Corn, Thawed
1 Cup Cooked and Shredded Chicken
1 Cup Shredded Cheddar Cheese
1/2 Cup Diced Bell Peppers (Any Colour)
1/4 Cup Chopped Fresh Coriander
4 Large Flour Tortillas

Total Time: 30 - 40 minutes
Serving Size: 2 - 3
- In a bowl, mix the sweet corn, cooked chicken, shredded cheese, diced bell peppers, and chopped coriander.
- Place a tortilla on a flat surface and spread the sweet corn and chicken mixture on one half of the tortilla.
- Fold the tortilla in half to cover the filling and press gently. Heat a non-stick pan over medium heat and cook the quesadilla for 2 - 3 minutes on each side until it turns golden and the cheese melts.
- Repeat the process with the remaining tortillas and filling.
- Cut the quesadilla into wedges and serve with salsa
