Total Time: +90 minutes
- Season the beef with salt and pepper. Dust the beef with flour, coating it evenly.
- Heat a large ovenproof pot over medium to high heat.
- Add oil to the pot and wait for it to become hot.
- Fry the beef in batches until browned on all sides. Remove the beef from the pot and set it aside.
- In the same pot, add more oil if needed, and then add the onions. Fry the onions for about 5 minutes until they become translucent.
- Add the garlic to the pot and mix well with the onions for about a minute.
- Return the beef to the pot and mix it with the onions and garlic. Adjust the seasoning if necessary.
- Add the herbs to the pot and pour in the stock. Stir everything together.
- Reduce the heat to a simmer and cover the pot. Let it simmer for about an hour, or until the beef starts to soften.
- After an hour, add the potatoes to the pot. Stir them into the mixture.
- Once the beef and potatoes are almost fully cooked, add the frozen vegetables to the pot. Stir well to combine.
- Cook for a further 10 minutes, or until the vegetables are heated through and the beef is tender.
