Directions

Prep Time: 5 - 10 minutes
Total Time: +90 minutes

  1. Season the beef with salt and pepper. Dust the beef with flour, coating it evenly.
  2. Heat a large ovenproof pot over medium to high heat.
  3. Add oil to the pot and wait for it to become hot.
  4. Fry the beef in batches until browned on all sides. Remove the beef from the pot and set it aside.
  5. In the same pot, add more oil if needed, and then add the onions. Fry the onions for about 5 minutes until they become translucent.
  6. Add the garlic to the pot and mix well with the onions for about a minute.
  7. Return the beef to the pot and mix it with the onions and garlic. Adjust the seasoning if necessary.
  8. Add the herbs to the pot and pour in the stock. Stir everything together.
  9. Reduce the heat to a simmer and cover the pot. Let it simmer for about an hour, or until the beef starts to soften.
  10. After an hour, add the potatoes to the pot. Stir them into the mixture.
  11. Once the beef and potatoes are almost fully cooked, add the frozen vegetables to the pot. Stir well to combine.
  12. Cook for a further 10 minutes, or until the vegetables are heated through and the beef is tender.
