Cajun Fish & Corn Salad
Ingredients
1 - 2 cups McCain Sweet Corn
500 grams fish fillets
4 teaspoons Cajun Spice
A blob of butter
1 packet Baby Leaf Salad
Rosa tomatoes
1 tin black beans / red kidney beans
1 packet coleslaw mix
1 small bunch Spring onions chopped
Coriander chopped
Salt and pepper
For the Lime & Coriander Salad Dressing
1/3 cup chopped coriander
1/3 cup good quality olive oil
2 tablespoons freshly squeezed lime juice
1 tablespoon Dijon mustard
2 teaspoons honey
1 teaspoon garlic and herb seasoning
Salt and pepper

Directions
Prep Time: 5 minutes
Total Time: 20 minutes
- Generously sprinkle the Cajun spice on both sides of the fish
- Heat butter in a pan
- Pan fry your fish until done and set aside
- In the same pan, drop in your corn and cook until done and slightly charred
- To assemble add the salad ingredients into a large bowl, except the dressing and mix well. Crumble large chunks of the fish on top of the salad and drizzle with dressing. I didn’t add salt as the Cajun spice has salt in it, you can add salt as per preference
- Combine all the dressing ingredients and mix well until combined, serve with the salad
