Cajun Fish & Corn Salad


1 - 2 cups McCain Sweet Corn

500 grams fish fillets 

4 teaspoons Cajun Spice 

A blob of butter 

1 packet Baby Leaf Salad 

Rosa tomatoes 

1 tin black beans / red kidney beans 

1 packet coleslaw mix 

1 small bunch Spring onions chopped 

Coriander chopped 

Salt and pepper


For the Lime & Coriander Salad Dressing

1/3 cup chopped coriander 

1/3 cup good quality olive oil 

2 tablespoons freshly squeezed lime juice 

1 tablespoon Dijon mustard 

2 teaspoons honey 

1 teaspoon garlic and herb seasoning 

Salt and pepper




Prep Time: 5 minutes
Total Time: 20 minutes

  1. Generously sprinkle the Cajun spice on both sides of the fish
  2. Heat butter in a pan
  3. Pan fry your fish until done and set aside
  4. In the same pan, drop in your corn and cook until done and slightly charred
  5. To assemble add the salad ingredients into a large bowl, except the dressing and mix well. Crumble large chunks of the fish on top of the salad and drizzle with dressing. I didn’t add salt as the Cajun spice has salt in it, you can add salt as per preference
  6. Combine all the dressing ingredients and mix well until combined, serve with the salad
