Cannellini Bean & Veg Soup
Ingredients
                2 tablespoons oil
1 large onion diced
2 stalks celery finely diced
3 cloves of garlic crushed
2 teaspoons paprika
1 teaspoon chilli flakes
1 can chopped tomatoes
1 teaspoon tomato paste
1 cup stock
2 teaspoons Italian herbs
2 cans cannellini beans – rinsed and drained
Italian parsley

                        Prep Time: 5 minutes 
                        Total Time: 40 minutes
                    
- Cook the McCain Roast veg according for 13 minutes and keep aside
 - In a large pot, heat oil on medium heat and the onions, garlic, and celery until translucent
 - Add the mixed herbs, paprika, chilli flakes, tomato paste and tomatoes
 - Allow to cook on medium heat until thickened – add stock in between – about 15 minutes
 - Gently add in the roast veg and cannellini beans
 - Allow to simmer for about 10 minutes
 - Remove from the heat, top with chopped parsley, and serve
 - Enjoy with friends and family
