Caprese Roast Veg Bake

Ingredients

McCain Roast Veg Balsamic Glaze  - Classic

1 can lentils, rinsed and drained

1 large aubergine, diced into chunks

2 teaspoons chopped garlic

Bottle of marinara sauce

2 teaspoons Italian herbs

1 cup rosa tomatoes

½ cup cream

Basil

1 cup Mozzarella

Salt and pepper to taste

4 – 5 people

Directions

Prep Time: 5 minutes
Total Time: 30 - 35 minutes

  1. Cook the Roast veg according to package instructions and set aside
  2. Fry the aubergines in some oil with the garlic until soft, to the aubergines add the marinara sauce,
  3. Italian herbs and lentils and adjust seasoning
  4. Simmer for about 2 minutes and remove from the heat
  5. Mix the roast veg with the marinara sauce and place in an oven proof casserole
  6. Add the rosa tomatoes to the mix
  7. Top with loads of mozzarella and salt and pepper
  8. Grill for about 5 minutes until the cheese has melted
