Chicken & Cauliflower Meatballs
Ingredients
                300 grams McCain Cauliflower Florets
500 grams chicken mince
2 teaspoons Italian herbs
2 teaspoons garlic crushed
1/3 cup grated mozzarella
3 tablespoons breadcrumbs
1 onion chopped
700 grams crushed tomatoes
1 bay leaf
Chopped parsley
Salt and pepper
Pasta of choice

                    5 - 6
Directions
                
                        Prep Time: 15 minutes 
                        Total Time: 40 - 45 minutes
                    
- Preheat oven to 200 Degrees Celsius
 - Toss the cauliflower florets with a dash of olive oil, salt and pepper and roast for 15 - 20 minutes
 - Once the cauliflower is done, remove cool and then blitz to resemble breadcrumbs
 - Add the chicken, cauliflower, Italian herbs, garlic, mozzarella, salt and pepper and breadcrumbs and mix well
 - Form meatballs
 - Heat oil in a large pot over medium heat
 - Fry the meatballs until golden and remove
 - Add onions and allow to caramelize
 - Once the onions are browned, add the crushed garlic, bay leaf, tomatoes, salt and pepper
 - Mix well and allow to simmer until thickened
 - Add the chicken meatballs and sprinkle with chopped parsley
 - Serve with pasta of choice
