Chicken & Cauliflower Meatballs

Ingredients

300 grams McCain Cauliflower Florets 

500 grams chicken mince

2 teaspoons Italian herbs

2 teaspoons garlic crushed

1/3 cup grated mozzarella

3 tablespoons breadcrumbs

1 onion chopped

700 grams crushed tomatoes

1 bay leaf

Chopped parsley

Salt and pepper

Pasta of choice

Directions

Prep Time: 15 minutes
Total Time: 40 - 45 minutes

  1. Preheat oven to 200 Degrees Celsius 
  2. Toss the cauliflower florets with a dash of olive oil, salt and pepper and roast for 15 - 20 minutes
  3. Once the cauliflower is done, remove cool and then blitz to resemble breadcrumbs
  4. Add the chicken, cauliflower, Italian herbs, garlic, mozzarella, salt and pepper and breadcrumbs and mix well
  5. Form meatballs
  6. Heat oil in a large pot over medium heat
  7. Fry the meatballs until golden and remove
  8. Add onions and allow to caramelize
  9. Once the onions are browned, add the crushed garlic, bay leaf, tomatoes, salt and pepper
  10. Mix well and allow to simmer until thickened
  11. Add the chicken meatballs and sprinkle with chopped parsley
  12. Serve with pasta of choice
