Chicken Vesuvio

Ingredients

1 packet McCain Wedges Original

2 cups McCain Garden Peas

Butter

1 ½ kg chicken pieces – skin on

1 large onion diced

4 teaspoons crushed garlic

2 teaspoons dried oregano

3 cups chicken stock

Directions

Prep Time: 5 minutes
Total Time: 45 minutes

  1. Bake the McCain Wedges according to package instructions and set aside
  2. Generously season the chicken with salt and pepper
  3. In a large pot, heat oil and fry the chicken skin side down until browned about 2 - 3 minutes a side
  4. Remove the chicken and set aside
  5. To the same pan, add the onions and garlic and oregano
  6. Deglaze the pan with a little chicken stock
  7. Once the onions are cooked add the rest of the stock to the pot and allow to reduce – about 6 minutes
  8. Add the chicken back into the pot and allow to simmer for about 30 minutes
  9. Keep checking to make sure the sauce does not dry up - if cooked on low the sauce should be fine, however keep extra stock on the side just in case
  10. Add the peas and cooked potatoes to the chicken and simmer for 5 minutes
  11. Enjoy with crusty bread to mop up that delicious sauce
