Chunky Sweet Potato And Carrot Soup
Ingredients
400 grams McCain Sweet Potato
400 grams McCain Julienne Carrots
2 tablespoons Olive Oil
1 onion finely diced
2 stalks celery chopped
2 cloves garlic minced
2 teaspoons dried parsley
2 cups stock Vegetable stock
Salt and pepper
Chopped parsley

Directions
Prep Time: 5 minutes
Total Time: 35 - 40 minutes
- Heat oil in a large pot and add the onions, celery and carrots
- After 6 minutes add the garlic and parsley
- Add in McCain Sweet Potato and mix well before adding the stock
- Allow to cook until the veg has softened
- Adjust seasoning and blend into a smooth co
- Remove 1/3 of the veg mixture and blend the rest into a smooth consistency
- Garnish with fresh parsley and croutons and serve immediately
