Creamy Chicken & Spinach Casserole
Ingredients
                1 packet McCain Roast Veg with Harissa Glaze
4 - 6 Chicken Fillets
4 cloves of garlic crushed
2 teaspoons Italian seasoning
2 teaspoons paprika
1 teaspoon whole grain mustard
1 tablespoon flour
¾ cup Cream
1 cup Chicken stock
½ cup grated Parmesan cheese
½ cup Mozzarella cheese
Salt and pepper

Directions
                
                        Prep Time: 5 minutes 
                        Total Time: 50 minutes
                    
- Preheat oven to 180 Degrees Celsius
 - Cook McCain Roast Veg according to package instructions
 - Combine the chicken with the Italian herbs, paprika, salt and pepper
 - Fry in batches in oil and set aside
 - To the same pan, add a blob of butter and sauté the garlic and spinach
 - Ensure all the water is dried up
 - Next add in the flour and stir well
 - Add the mustard
 - Slowly add the chicken stock and keep stirring before adding the cream
 - Simmer for about 2 minutes and remove from the heat
 - Transfer the chicken fillets to an oven proof casserole and top some mozzarella and parmesan
 - Pour over the creamy spinach mixture and allow to bake for 35 - 40 minutes
 - Serve with McCain Roast Veg
