Creamy Roast Veg Bake

Ingredients

1 packet McCain Roast Veg – Mediterranean

1 cup McCain Garden Spinach

1 cup Veg stock 

Oil

2 cloves of garlic crushed 

2 cups long life cream 

1 cup grated cheddar 

2 teaspoons chopped parsley and more for garnish

4 - 6

Directions

Prep Time: 5 minutes
Total Time: 25 minutes

  1. Heat a large pan with oil, add the onions and garlic and cook for 2 minutes
  2. Add McCain Roast Veg and cook for 6 minutes before adding the spinach, once the spinach has wilted, remove the pan from the heat
  3. In another sauce pan, add the stock and allow to reduce before adding the cream, allow to simmer for about 5 minutes on low heat, now add the grated cheese and switch off the heat
  4. The sauce will thicken with the cheese
  5. Now in an oven proof casserole, place the veg and pour over the cheesy sauce
  6. Bake for 15 minutes until browned and serve immediately
  7. Garnish with chopped parsley
