Crustless Quiche With Stir Fry Veg
Ingredients
3 Eggs
1 cup Milk
Spring onions
200 grams Rosa Tomatoes - halved
3 teaspoons Italian herbs
2 teaspoons paprika
1 cup Cheddar cheese - grated
Salt and pepper

Prep Time: 5 minutes
Total Time: 45 - 50 minutes
- Preheat oven to 180°C
- Add oil to a large skillet on medium heat
- Once hot, add the McCain Mexican Stir fry and sauté for 8 - 10 minutes until softened
- Combine the rest of the ingredients (except the rosa tomatoes and cheese)
- in a large jug and whisk well
- Grease a large pie dish and place the cooked stir fry veg in the dish
- Pour the egg mixture over the stir fry veg
- Top with the halved rosa tomatoes
- Add cheese and bake for 30 - 35 minutes
