Lamb, Green Bean & Potato Stew
Ingredients
                750 grams McCain Green Beans
300 grams McCain Diced Potato
Ghee
1 onion finely chopped
6 cloves garlic crushed
800 grams cubed lamb
Few sprigs fresh thyme
1 tablespoon mixed spice
2 teaspoons cumin powder
1 teaspoon chilli flakes (more if needed)
3 cups chopped tomatoes
Water if needed
Salt and pepper to taste
Small bunch of coriander

Directions
                
                        Prep Time: 5 minutes 
                        Total Time: 90 minutes
                    
- Heat ghee in a large pot over medium heat
 - Season the lamb with salt and pepper
 - Once the ghee is hot, add the onions and lamb and allow to brown – about 10 minutes or so
 - Add the crushed garlic and thyme and mix well
 - Next add the mixed spice, cumin, chili flakes, salt and pepper
 - Allow the spices to coat the meat and then add the chopped tomatoes
 - Cover, turn the heat to medium and allow to simmer for about 45 minutes to an hour until the meat is starting to soften
 - Add the McCain Green Beans and Diced Potatoes and cook for a further 30 minutes until the green beans and potatoes are tender
 - Garnish with chopped coriander
 - Serve with rice
