Lamb, Green Bean & Potato Stew

Ingredients

750 grams McCain Green Beans

300 grams McCain Diced Potato  

Ghee

1 onion finely chopped

6 cloves garlic crushed

800 grams cubed lamb

Few sprigs fresh thyme

1 tablespoon mixed spice

2 teaspoons cumin powder

1 teaspoon chilli flakes (more if needed)

3 cups chopped tomatoes

Water if needed

Salt and pepper to taste

Small bunch of coriander

Directions

Prep Time: 5 minutes
Total Time: 90 minutes

  1. Heat ghee in a large pot over medium heat
  2. Season the lamb with salt and pepper
  3. Once the ghee is hot, add the onions and lamb and allow to brown – about 10 minutes or so
  4. Add the crushed garlic and thyme and mix well
  5. Next add the mixed spice, cumin, chili flakes, salt and pepper
  6. Allow the spices to coat the meat and then add the chopped tomatoes
  7. Cover, turn the heat to medium and allow to simmer for about 45 minutes to an hour until the meat is starting to soften
  8. Add the McCain Green Beans and Diced Potatoes and cook for a further 30 minutes until the green beans and potatoes are tender
  9. Garnish with chopped coriander
  10. Serve with rice
