Lemon & Herb Pan Chicken
Ingredients
1,5 kg chicken thighs bone in skin on
3 teaspoons paprika
Olive oil
Juice of one large lemon
3 teaspoons crushed garlic
3 Tablespoons Italian herbs
Salt and pepper to taste

4 – 5 people
Directions
Prep Time: 5 minutes
Total Time: 45 minutes
- Preheat oven to 200 Degrees Celsius
- Season the chicken with salt, pepper and paprika and set aside
- In a jug combine the oil, lemon juice, garlic, Italian herbs and salt and pepper
- Place the chicken in a large oven tray and bake for 20 minutes
- Meanwhile combine the McCain Country Crop with the marinade and keep aside
- Remove the chicken from the oven and to the pan add the marinated veg
- Bake for a further 25 minutes until the veggies and chicken is cooked through
