Loaded Veggie Burger

Ingredients

6 x McCain Veggie Burgers

Olive oil

1 onion diced

3 cloves garlic minced

2 red chilies

2 teaspoon cumin seeds

1 bay leaf

1 tin chopped tomatoes

2 tablespoons masala

2 tins chickpeas - rinsed and drained

1 small red onion diced

1 teaspoon garam masala

Mint chutney

Chopped coriander

Pomegranate seeds

Salt and pepper to taste

Directions

Prep Time: 5 minutes
Total Time: 35 minutes

  1. Cook McCain Veg Burgers in an air fryer on 175 degrees for 15 minutes
  2. In a large pan, heat the oil and add the onions
  3. Allow to caramelize before adding the crushed garlic, cumin seeds and bay leaf
  4. Add the chopped tomatoes and masala and cook for 6 - 8 minutes
  5. Add the drained and rinsed chickpeas and simmer for 5 minutes
  6. Adjust seasoning
  7. To assemble
  8. Place the Veg Burgers on a serving platter
  9. Pour over some of the chickpea masala
  10. Drizzle with mint chutney, chopped red onions, garam masala and pomegranate seeds and enjoy
