Mexican Beef Fajitas

Ingredients

McCain Mexican Stir Fry Mix

600 grams beef rumps cut into strips 

2 tablespoons vegetable oil 

1 large onion sliced

 

Fajita Spice Mix

1 teaspoon garlic powder 

2 teaspoons cumin powder 

1 teaspoon oregano 

1 teaspoon chilli 

1 teaspoon smoked paprika 

1 teaspoon paprika 

1 teaspoon black pepper 

1 teaspoon salt

 

Ingredients for Guacamole

2 avocados 

Juice of 1 lime 

1 teaspoon salt ½ cup diced onions 

1 small tomato diced 

Half bunch chopped coriander 

1 teaspoon mince garlic 

½ teaspoon cayenne pepper – optional 

Salt and pepper

Directions

Prep Time: 10 - 15 minutes
Total Time: 5 - 10 minutes

  1. Combine all the ingredients in the fajita spice mix and set aside
  2. In a bowl, mash the avocados, salt and lime juice, add the chopped onions, tomato, garlic and cayenne pepper if using, check seasoning - refrigerate
  3. Season the beef with 2 teaspoons of the fajita spice mix
  4. Heat frying pan on high heat and add oil
  5. Once oil is hot, fry the beef in batches - 2 minutes per batch and set aside
  6. To the same pan add the onion and McCain Mexican Stir Fry Mix and 2 teaspoons of fajita spice mix
  7. Allow to cook on high heat for about 10 minutes until the water has dried up, once cooked remove from the heat and add the cooked beef rumps.
