Mexican Chicken And Crispers
Ingredients
1 Whole Chicken
Marinade for Chicken
4 tablespoons Olive oil
1 Orange Juiced – about 3 tablespoons
1 teaspoon Lemon Zest
3 teaspoons Fresh Garlic crushed
1 teaspoon Smoked paprika
1 teaspoon paprika
1 teaspoon Chilli flakes
1 tablespoon chopped fresh Oregano
1 teaspoon Cumin powder
Salt and pepper
Lemon Wedges or slices for Serving

Directions
Prep Time: 10 minutes
Total Time: 75 minutes
- Combine the all the ingredients listed under Marinade for Chicken and mix well olive,
- Rub the marinade all over the chicken
- Allow the chicken to stand for at least 2 hours, or overnight in the fridge
- Heat oven to 220 Degrees Celsius
- Roast the chicken for 15 minutes on 220 Degrees Celsius and then turn down the heat to 180 Degrees Celsius and cook for a further 40 minutes, turning once halfway
- Check if the water has run dry and the chicken is cooked
- Allow the chicken to rest for 10 minutes
- Enjoy with a large crisp salad and McCain Crispers
