Mexican Vegetable And Tomato Rice
Ingredients
1 packet McCain Mexican Stir Fry
Oil
1 onion diced
2 teaspoons crushed garlic
1 cup rice – washed and strained
2 - 3 medium sized tomatoes chopped
2 teaspoons paprika
1 teaspoon dried basil
1 can red kidney beans rinsed and drained
3 cups Chicken Stock
Chopped Italian parsley
Salt and pepper

Directions
Prep Time: 5 minutes
Total Time: 50 minutes
- Heat a large pot on medium to high heat
- Add the oil and onions and cook for 5 minutes before adding the garlic and McCain Mexican Stir Fry
- Add the paprika and dried basil and mix well before adding the chopped tomatoes
- Allow cooking for 5 minutes
- Now add in the rice and mix well
- Have your stock ready and add it to the pot, give it a good mix and close the lid and allow to simmer for 35 minutes - 40 minutes
- Once cooked garnish with chopped parsley and enjoy
