Mini Fish Nugget & Potato Smiles Stacks
Ingredients
1 x 500 g box of Sea Harvest Fish Nuggets*
1 x 415 g packet of McCain Potato Smiles
3 Tbsp (45 ml) tomato sauce
3 Tbsp (45 ml) mayonnaise
10 ribbons of cucumber, sliced using a vegetable peeler
10 squares of cheddar cheese (we used pre-sliced cheese and cut into 4 squares)
5 baby tomatoes, sliced in half
10 long, flat head toothpicks

Prep Time: 10 minutes
Total Time: 20 minutes
- Preheat the oven to 200 ºC.
- Arrange frozen Sea Harvest Fish Nuggets* and McCain Smiles on a baking tray.
- Place into the oven for 15 - 18 minutes and cook until golden and crunchy. Alternatively cook in an air fryer for the recommended time.*
- Mix the tomato sauce and mayonnaise together in a small bowl and set aside.
- To assemble, give a Smile a layer of sauce, then skewer in the centre with a toothpick to form a base. It is easiest to skewer from underneath and leave the pointed end facing upwards so that you can continue to skewer the rest of the ingredients.
- Concertina a ribbon of cucumber and add to the skewer, followed by a nugget, a square of cheese and a baby tomato half.
- Finish by skewering a second Smile on top.
- Serve the mini stacks with extra dipping sauce on the side.

Variations, Hints and Tips
*Tips: You will need 10 nuggets to make the stacks, so either cook just 10 or cook the full box and serve extra nuggets on the side with dipping sauce.
