Pea & Bacon Pasta Salad

Ingredients

300 grams McCain Peas

500 grams Bacon cut into pieces 

2 tablespoons Butter 

1 Onion finely diced 

Small bunch of Thyme 

½ cup Cream 

½ cup Parmesan grated 

Salt and pepper 

Chopped Parsley 

1 packet Penne pasta cooked and drained – keep ½ cup of the cooked pasta water

Directions

Prep Time: 5 minutes
Total Time: 20 minutes

  1. Cook pasta and set aside
  2. Fry the bacon and set aside
  3. To the same pan, melt the butter and add the onions, thyme and peas and cook for 5 minutes
  4. Add the cream and parmesan
  5. Add the cooked bacon back to the pot and toss with the pasta – add some of the reserved water from the cooked pasta
  6. Add more parmesan and serve
