Peanut Satay Chicken
Ingredients
                1 packet McCain Roast Veg Classic
1 cup McCain Garden Peas
2 tablespoons Oil
2 teaspoons crushed garlic
800g Chicken Fillets cubed
Salt and pepper to taste
Peanut Satay Sauce
1/2 cup peanut butter
1/2 cup soy sauce
Sachet of sauce from McCain Roast Veg Classic
1 tablespoon cornstarch
1 tablespoon water

                    4 - 5
Directions
                
                        Prep Time: 5 minutes 
                        Total Time: 40 minutes
                    
- Combine all the ingredients listed under Peanut Satay Sauce and whisk well until smooth - keep aside
 - Season chicken with salt and pepper
 - Heat oil in large skillet and on medium-to-high heat
 - Fry the chicken in batches until done
 - Remove and keep aside
 - Add the garlic to the skillet and fry for 30 seconds before adding the veg
 - Allow to cook for 6 minutes before adding the peas
 - Cook for a further 4 minutes and add the chicken back to the pot
 - Add in the peanut sauce and mix well – cook for a further 3 minutes and switch off heat
 - Serve with rice
