Peanut Veg Fried Rice
Ingredients
1 packet Hawaiian Stir Fry
1 cup McCain Frozen Peas
2 tablespoons oil
1 large onion thickly sliced
1 bunch spring onions – chopped with the white and green parts separated
2 teaspoons crushed garlic
100 ml soy sauce
1 teaspoon black pepper powder
3 cups cooked rice
1/3 cup peanuts
Fresh Basil chopped
Salt to taste

Directions
Prep Time: 5 minutes
Total Time: 25 minutes
- In a large skillet on medium to high heat, add the oil and fry the onions with the green part of the spring onions
- Once the onions are translucent add the garlic, fry for a minute
- Add in the stir fry mix and the peas and allow to cook for about 6 minutes
- In with the soy sauce and black pepper, mix well
- Add in the cooked rice and cook for a further 3 minutes and remove from the heat
- Adjust seasoning
- Sprinkle the peanuts and garnish with fresh basil
