Penne Veg Napoli
Ingredients
1 packet McCain Roast Veg Mediterranean
3 tablespoons oil
2 can chopped onion and tomato mix
1 teaspoon tomato paste
4 cloves of garlic finely diced
2 teaspoons chilli flakes
1 teaspoon brown sugar
3 teaspoons Italian herbs
Black pepper
Salt
Basil
Penne pasta boiled until dente
Parmesan cheese

Prep Time: 5 minutes
Total Time: 30 minutes
- Preheat oven to 180 Degrees Celsius
- Cook the roast veg according to package instructions and set aside
- In a skillet on medium heat, add the oil and when hot add the garlic and fry for 30 seconds before adding the canned tomatoes and onion mix, mix well
- Add the chilli flakes, brown sugar, tomato paste and Italian herbs and mix well
- Simmer on low heat until thickened about 12 - 15 minutes
- Add in the roasted veg, toss in the pasta and very gently stir to combine
- Adjust seasoning
- Garnish with basil and parmesan
