Persian Beef And Pea Stew
Ingredients
                400 grams McCain Peas
2 tablespoons olive oil
800 grams cubed beef pieces
1 large onion diced
2 stalks celery sliced
1 bay leaf
3 teaspoons minced garlic
3 tablespoons tomato paste
3 - 4 cups beef stock
1 teaspoon chilli powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon mixed spice
1 teaspoon turmeric
2 teaspoons paprika
Juice of 1 lemon
Salt and pepper

Directions
                
                        Prep Time: 5 minutes 
                        Total Time: 120 minutes
                    
- Season the meat with salt and pepper
 - In a large pot add the oil and fry the beef in batches
 - Remove the beef and set aside
 - To the same pot add the onions, celery, and bay leaf
 - After 5 minutes add the garlic, mix well and sauté for a minute before adding the spices with a dash of water
 - Add the tomato paste and mix well, then add the beef back to the pot - mix well to combine all the flavours
 - Add in the stock and allow to cook until meat is tender
 - Add in the peas and cook for a further 10 minutes
 - Remove from heat and add the lemon juice
 - Serve hot with rice or mash
