Portuguese Rump & Oven Chips
Ingredients
1 packet McCain Texan BBQ Oven Chips
For the Rumps
700g Beef rump medallions
3 teaspoons paprika
2 bay leaves
2 teaspoons parsley dried
1 onion diced
1 teaspoon chilli flakes
2 teaspoon garlic powder
2 teaspoons Worcestershire sauce
Salt and pepper
1 large onion diced
3 cloves of garlic diced
2 teaspoons paprika
2 cups veg stock
1 cup cream

Directions
Prep Time: 5 minutes
Total Time: 40 minutes
- Cook the McCain Oven Chips according to package instructions
- Marinate the rump with all the ingredients listed and keep aside
- Fry the beef in batches and remove once done
- Add onions to the pan with the garlic and sauté until translucent
- Add the paprika followed by the stock
- Allow to reduce then add the beef back to the pot and top with the cream
- Cook for a further 2 minutes and then remove from the heat
- Enjoy with friends and family :)
