Pumpkin Tikka Masala

Ingredients

750g McCain Pumpkin Chunks

1 large onion chopped

3 teaspoons garlic and ginger

3 teaspoons coriander powder

1 teaspoon cumin powder

1 teaspoon chili powder – more if needed

1 tablespoon garam masala

1 teaspoon turmeric

½ teaspoon black pepper

1 tin chopped tomato

½ cup cream

Salt and pepper to taste

Chopped coriander

Directions

Prep Time: 5 minutes
Total Time: 40 minutes

  1. Preheat oven to 180 Degrees Celsius
  2. Drizzle the pumpkin chunks with olive oil and a sprinkling of cumin powder
  3. Roast for about 20 minutes until its done- remove from the oven and set aside
  4. Heat oil in a large pot on medium to high heat
  5. Add the onions and fry until translucent, followed by the garlic and ginger
  6. Next add the spices and mix well – add a dash of water to prevent the spices from burning
  7. Now add the tomatoes and cook on low for about 10 minutes
  8. Add the cream and stir followed by the roasted pumpkin to the sauce
  9. Simmer for a minutes and switch of the heat
  10. Serve with naan bread or rice
  11. Enjoy with your friends and family :)
