Roast Veg & Brussels Sprouts Salad
Ingredients
300 grams McCain Brussels Sprouts
1 large packet mixed salad leaves
Feta cheese
Small punnet of Rosa Tomatoes
For the Vinaigrette
½ cup olive oil
2 tablespoons balsamic vinegar
2 teaspoons brown sugar
Salt
Juice of 1 lemon
Black pepper
3 tablespoons Dijon mustard

Prep Time: 5 minutes
Total Time: 30 minutes
- Cook the Roast Veg and Brussels Sprouts according to package instruction and keep aside
- Combine all the vinaigrette ingredients and mix well
- In a large platter, spread the lettuce
- Add the Roasted Veg and Brussels sprouts
- Now add the red onions, tomatoes, cucumber and feta
- Drizzle with vinaigrette and enjoy with crusty bread
