Roast Veg Salad
Ingredients
                McCain Roast Veg Balsamic Glaze - Classic
1 can chickpeas rinsed and drained
Rocket
A handful of Pomegranate seeds
Salt and pepper to taste
For the Dressing
Juice of 1 small lemon
2 tablespoon Balsamic glaze
1 teaspoon olive oil
½ teaspoon cumin powder
½ teaspoon sugar
1 teaspoon Chilli flakes
Salt and pepper to taste

                    4 – 5
Directions
                
                        Prep Time: 5 minutes 
                        Total Time: 25 minutes
                    
- Cook the Roast veg according to package instructions
 - Combine all the ingredients for the dressing and mix well to incorporate and mix with the chickpeas
 - On a large plate/platter spread the cooked roast veg with the glaze, add the chickpeas, rocket and
 - Top with the pomegranate seeds
 - Season with salt and freshly ground black pepper
