Roasted Peri Chicken With Stir Fry Veg
Ingredients
1 packet McCain Stir Fry African
1 tablespoons olive oil
1.5 kg Chicken pieces – skin on
2 tablespoons garlic and ginger
1 tablespoon Chicken spice
Salt and pepper to taste
Ingredients for Sauce
¾ cup Mayonnaise
1 heaped tablespoon Chicken Spice
1 tablespoon Garlic sauce
1 teaspoon Dried parsley
1 teaspoon paprika
3 tablespoons hot / peri peri sauce of choice
1 teaspoon lemon juice
Salt and pepper to taste
300ml cream

Directions
Prep Time: 10 minutes
Total Time: 60 minutes
- Preheat oven to 180 Degrees Celsius
- Rub the chicken with the oil, chicken spice, garlic and ginger and salt and pepper
- Place in the oven for about 40 minutes – turning once
- Meanwhile gather all the ingredients listed under sauce (except the cream) and place in a sauce pan over medium heat , mix well and simmer until starting to bubble
- Add in the cream after 2 minutes and allow to simmer and switch off
- Fry the Stir fry veg in a skillet with some oil and fresh chopped garlic, until tender and crunchy, season and keep aside
- After 40 minutes of the chicken being in the oven, remove the chicken from the oven and pour over the sauce and place back in the oven for 10 minutes
- Serve with Chips and Stir Fry Veg
