Spinach & Chicken Masala

Ingredients

500 grams McCain Garden Spinach 

800 grams chicken fillets cubed

Oil

1 onion chopped

1 teaspoon cumin seeds

1 cinnamon stick

3 cloves

2 teaspoons garlic and ginger paste

3 tablespoons curry powder

½ teaspoon ground nutmeg

1 teaspoon turmeric  

3 large tomatoes chopped

1 heaped tablespoon of yoghurt

Salt and pepper to taste

Directions

Prep Time: 5 minutes
Total Time: 30 minutes

  1. In a large pot, heat the oil and add the cumin seeds, cloves and cinnamon stick
  2. Now add the chopped onions and allow to brown
  3. Add the garlic and ginger and mix well
  4. Add the curry powder, nutmeg, turmeric and chopped tomatoes and allow to simmer for about 5 minutes
  5. Add the cut chicken and mix well
  6. Adjust seasoning
  7. Cook until chicken is almost done
  8. Add the McCain Garden Spinach and yoghurt and give it a quick  mix then close the pot lid and cook for 5 minutes then switch off the heat
  9. Garnish with fresh chopped dhania
  10. Serve with roti or rice
