Sweet Potato Fries & Garlic Pesto
Ingredients
McCain Rosemary and Garlic Sweet Potato Fries
1/3 cup olive of extra virgin olive oil
1 small garlic clove crushed
3 cups basil leaves
3 tablespoons pine nuts or peanuts
Juice of 1 lemon
1 cup grated parmesan
Salt and black pepper

Prep Time: 10 minutes
Total Time: 20 - 25 minutes
- Cook the McCain Rosemary and Garlic Sweet Potato Fries according to package instructions
- In a food processor add the basil, garlic, pine nuts / peanuts, parmesan and lemon juice and blend to combine
- Slowly start adding the olive oil into the processor until it starts to emulsify and thicken
- Taste and adjust seasoning as needed
- Lay the Sweet potato fries on a serving dish and drizzle with the delicious basil pesto sauce
