Sweet Potato Shepherd’S Pie
Ingredients
750 grams McCain Rosemary & Garlic Sweet Potato Fries
2 cups McCain Mixed Veg
600 grams lamb mince
1 large onion diced
3 teaspoons crushed garlic
1 teaspoon chilli flakes
3 teaspoons tomato paste
2 tins canned tomatoes
1 tablespoon Worcestershire sauce
1 beef stock cube
1 cup water - warm
3 teaspoons mixed herbs

Directions
Prep Time: 5 minutes
Total Time: 45 – 60 minutes
- Preheat Oven to 180 Degrees Celsius, roast the sweet potato fries
- Once the sweet potato fries are done remove from the oven and using a masher, press done to crush the sweet potatoes
- Meanwhile in a large pot heat oil on medium to high heat
- Add the onions and fry for a few minutes before adding garlic, mixed herbs and chilli flakes
- Now add the lamb mince and break out the lumps with the back of a spoon
- Allow the mince to brown and the water must evaporate before seasoning
- Add the tomato paste, tomatoes, Worcestershire sauce, stock cube and water
- Allow to simmer for about 15 – 20 minutes until thickened
- While the lamb mince is cooking, preheat Oven to 180 Degrees Celsius, roast the sweet potato fries
- Once the sweet potato fries are done remove from the oven and using a masher to press done / to crush the sweet potatoes
- Back to the lamb mince, now add the mixed veg to the lamb mince and simmer for a further 5 minutes
- In a oven proof casserole, place the delicious saucy lamb and veg sauce, and top with the crushed rosemary sweet potato fries
- Sprinkle cheese and bake for 20 minutes on 180 Degrees Celsius
- Enjoy with a green salad, and friends and family :)
