Sweet Potato Shepherd’S Pie

Ingredients

750 grams McCain Rosemary & Garlic Sweet Potato Fries

2 cups McCain Mixed Veg

600 grams lamb mince

1 large onion diced

3 teaspoons crushed garlic

1 teaspoon chilli flakes

3 teaspoons tomato paste

2 tins canned tomatoes

1 tablespoon Worcestershire sauce

1 beef stock cube

1 cup water - warm

3 teaspoons mixed herbs

Directions

Prep Time: 5 minutes
Total Time: 45 – 60 minutes

  1. Preheat Oven to 180 Degrees Celsius, roast the sweet potato fries
  2. Once the sweet potato fries are done remove from the oven and using a masher, press done to crush the sweet potatoes
  3. Meanwhile in a large pot heat oil on medium to high heat
  4. Add the onions and fry for a few minutes before adding garlic, mixed herbs and chilli flakes
  5. Now add the lamb mince and break out the lumps with the back of a spoon
  6. Allow the mince to brown and the water must evaporate before seasoning
  7. Add the tomato paste, tomatoes, Worcestershire sauce, stock cube and water
  8. Allow to simmer for about 15 – 20 minutes until thickened
  9. While the lamb mince is cooking, preheat Oven to 180 Degrees Celsius, roast the sweet potato fries
  10. Once the sweet potato fries are done remove from the oven and using a masher to press done / to crush the sweet potatoes
  11. Back to the lamb mince, now add the mixed veg to the lamb mince and simmer for a further 5 minutes
  12. In a oven proof casserole, place the delicious saucy lamb and veg sauce, and top with the crushed rosemary sweet potato fries
  13. Sprinkle cheese and bake for 20 minutes on 180 Degrees Celsius
  14. Enjoy with a green salad, and friends and family :)
