Tuna & Sweet Corn Salad
Ingredients
2 cups McCain Sweet Corn
3 cups brown rice, uncooked
2 tins shredded tuna in salted water, drained
2 spring onions, chopped
100g sundried tomatoes, roughly chopped
140g mixed baby leaf salad
2 avocados, peeled and diced
Greek salad dressing

Prep Time: 5 minutes
Total Time: 5 minutes
- Boil rice in salted water until cooked, then drain and allow to cool.
- Boil McCain sweet corn in hot water for 4 minutes, then drain and set aside.
- Place your brown rice in a large bowl, stir in McCain Sweet Corn, tuna, spring onion, sundried tomatoes, baby leaves and avocado.
- Add the salad dressing and toss to coat the salad, season to taste with salt and black pepper.
