Vegetable Penne
Ingredients
500 grams penne pasta
3 tablespoons olive oil
1 onion finely chopped
2 cloves garlic finely chopped
1 cup of baby tomatoes
2 tablespoons balsamic vinegar
1 teaspoon chilli flakes
½ bunch chopped basil
1 teaspoon chopped sage leaves
Salt and pepper to taste

Prep Time: 5 minutes
Total Time: 15 - 20 minutes
- Cook the pasta, drain and set aside
- Heat olive oil in pan over medium heat and add the onions and garlic and allow to cook gently
- Add the baby tomatoes, salt and balsamic vinegar to the pan and allow to cook for about 6 minutes until they blister and charred
- Remove the onions and tomatoes from the pan
- To the same pan add a splash of olive oil and the McCain French Stir Fry with the chilli flakes - mix and allow to cook over high heat
- Once cooked, remove from the heat and the onions and baby tomatoes back to the pan
- Toss the cooked vegetables with the pasta and add in the chopped basil and chopped sage
- Adjust seasoning and serve with crusty bread
