Vegetarian And Chickpea Stew
Ingredients
250 grams McCain Country Crop
2 tablespoons oil
1 onion diced
3 cloves garlic minced
1 bay leaf
2 tablespoon curry powder (add less if preferred)
½ teaspoon turmeric
1 stock cube
¾ cup water
2 large tomatoes chopped
2 can chickpeas – rinsed and drained

Prep Time: 5 - 10 minutes
Total Time: 45 minutes
- Heat a large pot over medium to high heat and add the oil.
- Once the oil is heated, add the onions, bay leaf, and garlic to the pot. Cook them on low heat for 5 - 8 minutes.
- After cooking the onions, bay leaf, and garlic, add the spices and tomatoes to the pot. Stir well to combine.
- Allow the mixture to simmer for about 5 minutes.
- Next, crumble the stock cube into the pot and add water. Stir well to dissolve the stock cube.
- Simmer the mixture for an additional 10 minutes to let the flavors develop.
- After 10 minutes, add the frozen vegetables and chickpeas to the pot. Stir well to combine.
- Let the mixture simmer for another 10 minutes, or until the vegetables are cooked to your desired tenderness.
- Once everything is cooked and flavors are well combined, garnish the dish as desired, and serve hot with bread.
