Vegetarian And Chickpea Stew


250 grams McCain Country Crop

2 tablespoons oil 

1 onion diced 

3 cloves garlic minced

1 bay leaf

2 tablespoon curry powder (add less if preferred)

½ teaspoon turmeric

1 stock cube

¾ cup water

2 large tomatoes chopped

2 can chickpeas – rinsed and drained

Chopped coriander




Prep Time: 5 - 10 minutes
Total Time: 45 minutes

  1. Heat a large pot over medium to high heat and add the oil.
  2. Once the oil is heated, add the onions, bay leaf, and garlic to the pot. Cook them on low heat for 5 - 8 minutes.
  3. After cooking the onions, bay leaf, and garlic, add the spices and tomatoes to the pot. Stir well to combine.
  4. Allow the mixture to simmer for about 5 minutes.
  5. Next, crumble the stock cube into the pot and add water. Stir well to dissolve the stock cube.
  6. Simmer the mixture for an additional 10 minutes to let the flavors develop.
  7. After 10 minutes, add the frozen vegetables and chickpeas to the pot. Stir well to combine.
  8. Let the mixture simmer for another 10 minutes, or until the vegetables are cooked to your desired tenderness.
  9. Once everything is cooked and flavors are well combined, garnish the dish as desired, and serve hot with bread.
