Winter Roasted Chickpeas And Veg Salad With Balsamic And Mustard Reduction
Ingredients
1 bag McCain Roast Veg Classic
Olive Oil
1 can chickpeas – rinsed and drained
200 grams feta cheese
1 Red onion finely sliced
2 packets fresh rocket leaves
Dressing ingredients
1/3 cup balsamic vinegar
3 teaspoons mustard
3 teaspoons honey
2 teaspoons Italian herbs
Salt and pepper to taste

Prep Time: 5 minutes
Total Time: 25 minutes
- Preheat oven to 180 Degrees Celsius
- Cook the roast veg according to package instructions and set aside
- Season the chickpeas and drizzle with olive oil, place on a baking sheet and roast for 10 - 12 minutes until roasted – keep aside
- Combine all the dressing ingredients in a jar with a tight lid and give it a good shake until well combined
- Place the red onions and rocket on a large platter / flat bowl and top with the roasted veg and roasted chickpeas, add the feta cheese
- Drizzle the balsamic and mustard reduction
- Adjust seasoning and enjoy
