Winter Roasted Chickpeas And Veg Salad With Balsamic And Mustard Reduction

Ingredients

1 bag McCain Roast Veg Classic

Olive Oil

1 can chickpeas – rinsed and drained

200 grams feta cheese

1 Red onion finely sliced

2 packets fresh rocket leaves

 

Dressing ingredients

1/3 cup balsamic vinegar

3 teaspoons mustard

3 teaspoons honey

2 teaspoons Italian herbs

Salt and pepper to taste

Prep Time: 5 minutes
Total Time: 25 minutes

  1. Preheat oven to 180 Degrees Celsius
  2. Cook the roast veg according to package instructions and set aside
  3. Season the chickpeas and drizzle with olive oil, place on a baking sheet and roast for 10 - 12 minutes until roasted – keep aside
  4. Combine all the dressing ingredients in a jar with a tight lid and give it a good shake until well combined
  5. Place the red onions and rocket on a large platter / flat bowl and top with the roasted veg and roasted chickpeas, add the feta cheese
  6. Drizzle the balsamic and mustard reduction
  7. Adjust seasoning and enjoy
