Zesty Bacon and Veg Pasta Salad
Ingredients
                500 grams McCain Country Crop
1 packet diced bacon
2 teaspoons Italian herbs
1 teaspoon garlic powder
Olive oil
1 cup macaroni pasta, cooked according to package instructions
Chopped parsley
Salt and pepper
For the vinaigrette
½ cup Olive oil
Juice of 1 lime
1 teaspoon Dijon mustard
2 teaspoons apple cider vinegar
2 teaspoons honey
Salt and pepper

                        Prep Time: 5 - 10 minutes 
                        Total Time: 30 - 40 minutes
                    
- Preheat your oven to 180 degrees
 - Line a baking tray with parchment paper, and evenly spread out the McCain Country Crop, red onion chunks, and diced bacon.
 - Season the mixture with salt, pepper, Italian herbs, and garlic powder.
 - Drizzle the mixture with a bit of olive oil and give it a good mix, ensuring the seasoning is evenly distributed.
 - Roast the mixture in the preheated oven for 20 to 25 minutes or until the vegetables are tender and the bacon is crispy.
 - Remove the tray from the oven and allow the roasted ingredients to cool.
 - While the roasted ingredients are cooling, prepare the vinaigrette. In a separate bowl, combine the olive oil, lime juice, Dijon mustard, apple cider vinegar, honey, and a pinch of salt and pepper. Mix well to create the vinaigrette.
 - In a large salad bowl, combine the roasted bacon and vegetables with the cooked macaroni pasta. Add chopped parsley for freshness.
 - Drizzle the zesty vinaigrette generously over the salad, ensuring all the ingredients are well coated.
