Zesty Bacon and Veg Pasta Salad


500 grams McCain Country Crop

1 packet diced bacon

2 teaspoons Italian herbs

1 teaspoon garlic powder

Olive oil

1 cup macaroni pasta, cooked according to package instructions

Chopped parsley

Salt and pepper


For the vinaigrette

½ cup Olive oil

Juice of 1 lime

1 teaspoon Dijon mustard

2 teaspoons apple cider vinegar

2 teaspoons honey

Salt and pepper




Prep Time: 5 - 10 minutes
Total Time: 30 - 40 minutes

  1. Preheat your oven to 180 degrees
  2. Line a baking tray with parchment paper, and evenly spread out the McCain Country Crop, red onion chunks, and diced bacon.
  3. Season the mixture with salt, pepper, Italian herbs, and garlic powder.
  4. Drizzle the mixture with a bit of olive oil and give it a good mix, ensuring the seasoning is evenly distributed.
  5. Roast the mixture in the preheated oven for 20 to 25 minutes or until the vegetables are tender and the bacon is crispy.
  6. Remove the tray from the oven and allow the roasted ingredients to cool.
  7. While the roasted ingredients are cooling, prepare the vinaigrette. In a separate bowl, combine the olive oil, lime juice, Dijon mustard, apple cider vinegar, honey, and a pinch of salt and pepper. Mix well to create the vinaigrette.
  8. In a large salad bowl, combine the roasted bacon and vegetables with the cooked macaroni pasta. Add chopped parsley for freshness.
  9. Drizzle the zesty vinaigrette generously over the salad, ensuring all the ingredients are well coated.
  10. Serve your Zesty Bacon and Vegetable Pasta Salad and enjoy!
